Linen cloth bread cloths, or "couche de boulanger", as the French call them, are used to support the rising of bread dough. When the dough is ready for the final rising, a rising basket is taken, and a linen cloth is placed in it. Flour the cloth, preferably with rice flour, as this does not bind gluten and makes the dough stick less to the basket. Place the dough in the basket, cover it with another linen cloth and leave it to rise. Linen is a unique material for bread-making because it allows the dough to breathe and wicks away moisture. We have chosen 100% natural and unbleached flax from Lithuania, where flax has a special place in the folklore tradition. Our linen fabrics are also certified for materials made without harmful substances STANDARD 100 by OEKO-TEX®.
