Linen cloth bread cloths, or "couche de boulanger", as the French call them, are used to support the rising of bread dough. When the dough is ready for the final rising, a rising basket is taken, and a linen cloth is placed in it. Flour the cloth, preferably with rice flour, as this does not bind gluten and makes the dough stick less to the basket. Place the dough in the basket, cover it with another linen cloth and leave it to rise. Linen is a unique material for bread-making because it allows the dough to breathe and wicks away moisture. We have chosen 100% natural and unbleached flax from Lithuania, where flax has a special place in the folklore tradition. Our linen fabrics are also certified for materials made without harmful substances STANDARD 100 by OEKO-TEX®.

Description

CARE:

After each use, shake the cloth outdoors to remove excess flour and dough residue and air-dry it before putting it away. The cloth is used only for rising the bread and should not be washed, as, over time, a layer of flour builds on the cloth, which further prevents the dough from sticking to the cloth and also helps it to rise better.

If the cloth gets dirty, it can be washed by hand with mild soapy water or in the washing machine on the hand-wash programme at 40°C on low. Air dry or tumble dry on low or medium power.
